My Favorite Canned Food Recipe!!!

My readers know how much I love the opportunities that belonging to different blogging networks bring to It's Really Only a Purple World.  Today's opportunity comes from Twitter Moms and the challenge is to share with my readers information from the Canned Food Alliance.

After watching the video I learned lots of things about how vegetables like beans and tomatoes are processed to retain the maximum nutritional value during the canning process.  It was actually very interesting.
Part of our task is to share our favorite canned food recipes so this is my contribution:
Lasagna:
Ingredients

1 pound sweet Italian sausage

3/4 pound lean ground beef

1/2 cup minced onion

2 cloves garlic, crushed

1 (28 ounce) can crushed tomatoes

2 (6 ounce) cans tomato paste

2 (6.5 ounce) cans canned tomato sauce

1/2 cup water

2 tablespoons white sugar

1 1/2 teaspoons dried basil leaves

1/2 teaspoon fennel seeds

1 teaspoon Italian seasoning

1 tablespoon salt

1/4 teaspoon ground black pepper

4 tablespoons chopped fresh parsley

12 lasagna noodles

16 ounces ricotta cheese

1 egg

1/2 teaspoon salt

3/4 pound mozzarella cheese, sliced

3/4 cup grated Parmesan cheese

Directions

1.In a Dutch oven, cook sausage, ground beef, onion, and garlic over medium heat until well browned. Stir in crushed tomatoes, tomato paste, tomato sauce, and water. Season with sugar, basil, fennel seeds, Italian seasoning, 1 tablespoon salt, pepper, and 2 tablespoons parsley. Simmer, covered, for about 1 1/2 hours, stirring occasionally.

2.Bring a large pot of lightly salted water to a boil. Cook lasagna noodles in boiling water for 8 to 10 minutes. Drain noodles, and rinse with cold water. In a mixing bowl, combine ricotta cheese with egg, remaining parsley, and 1/2 teaspoon salt.

3.Preheat oven to 375 degrees F (190 degrees C).

4.To assemble, spread 1 1/2 cups of meat sauce in the bottom of a 9x13 inch baking dish. Arrange 6 noodles lengthwise over meat sauce. Spread with one half of the ricotta cheese mixture. Top with a third of mozzarella cheese slices. Spoon 1 1/2 cups meat sauce over mozzarella, and sprinkle with 1/4 cup Parmesan cheese. Repeat layers, and top with remaining mozzarella and Parmesan cheese. Cover with foil: to prevent sticking, either spray foil with cooking spray, or make sure the foil does not touch the cheese.

5.Bake in preheated oven for 25 minutes. Remove foil, and bake an additional 25 minutes. Cool for 15 minutes before serving.

My Comment: I have yet to understand what the country's fascination is with this show and its " characters" so I am looking forward to an in your face perspective of what makes this ensemble tick!

Wednesday, Feb 24: Nadya Suleman who famously gave birth to octuplets last year will be making her first trip to NYC to chat live with the Women of the View. Author Danielle Steel will also be a guest.



My Comment: It will be interesting to see what the other mothers have to say about how they feel about this hot topic!

Thursday, Feb 25: A one hour show themed “trying to have a baby?”Guests include Giuliana And Bill Rancic



My Comment: This should be especially poignant so grab the tissues before you start watching!

Friday, Feb 26: Regis and Joy Philbin will perform a song from their new CD: Regis & Joy: Just you. Just
me.



My Comment: I am dying to hear what they sound like and the reaction from the woman of The View!

I am now an Official Brand Ambassador for The View!!!

One of the great things about having this blog is all the wonderful programs I get invited to join.  My being chosen as an Official Brand Ambassador for The View is my newest accomplishment!

Oh The Wonderful Things You Can Eat With POM Wonderful - What A TREAT!!!!


 


I love to cook and I love recipes that utilize simple foods with simple ingredients done in a simple way.  When I received an email from the people at Pom Wonderful  products asking me to try POM in some new recipes from their website I was excited!

While looking at the website to find some yummy recipes to try I was impressed with the details of the history and health benefits of Pomegranates. Check out this information from the POM website:
"For centuries, the pomegranate has been valued as a symbol of health and has been the centerpiece of many traditional folk medicine practices. Learn more about the History & Culture of the pomegranate. In 1998, POM initiated modern medical research to understand the health benefits of the Wonderful variety of pomegranates. To date, we’ve invested $32 million. This research has involved a number of top scientists from leading universities around the world, including a Nobel Laureate. So far, 47 total studies, including 14 clinical studies, have been published in peer-reviewed journals. Primary research areas have included prostate, cardiovascular, and erectile function as well as antioxidant composition and safety/bioavailability. Preliminary results have been encouraging and many additional research studies are in progress. Learn more about POM's published studies"

Although many of the recipes looked really interesting, I chose the Steak recipe below to try: I used the POM Wonderful juice in the recipe and not fresh pomegranates.

POM and Red Wine-Sauced Steak

Time to Table: 15 Minutes Prep, 11 - 15 Minutes Cooking.
Makes: 4 Servings.


Ingredients

  • Juice from 2 large POM Wonderful Pomegranates,* or 2/3 cup POM Wonderful 100% Pomegranate Juice
  • 3 cloves minced garlic, or 1 1/2 teaspoons pre-minced garlic
  • 2-3 tablespoons olive or vegetable oil
  • 1/4 cup dry red wine
  • 1/4 cup water
  • 1 tablespoon cornstarch
  • 1 teaspoon crushed dried basil
  • 1/2 teaspoon crushed dried thyme
  • 2 teaspoons molasses
  • 1/2 teaspoon salt
  • 4 rib-eye steaks, cut 3/4-inch thick and trimmed of fat
  • Garnish (optional):
  • 1/4 cup arils from 1 large POM Wonderful Pomegranate

Preparation

  • 1. Prepare garnish - Score 1 fresh pomegranate and place in a bowl of water. Break open the pomegranate underwater to free the arils (seed sacs). The arils will sink to the bottom of the bowl and the membrane will float to the top. Sieve and put the arils in a separate bowl. Reserve 1/4 cup of arils from fruit and set aside. (Refrigerate or freeze remaining arils for another use.)
  • 2. Prepare fresh pomegranate juice.*
  • 3. Preheat broiler. Oil the rack of a broiler pan.
  • 4. Place oil in a medium saucepan and heat until hot. Saut garlic in hot oil for 1 minute, stirring frequently.
  • 5. Stir in the pomegranate juice, wine, water, cornstarch, seasonings and molasses. Bring mixture to a boil; reduce heat. Simmer 5 minutes.
  • 6. Pour mixture into a sauceboat.
  • 7. Arrange steaks on prepared broiler pan; broil 3 inches from heat for 4 minutes. Turn steaks; broil 2 minutes.
  • 8. Brush steaks generously with sauce; broil 2 minutes more for medium-rare, or longer for desired doneness.
  • 9. Arrange steaks on platter; garnish with reserved arils. Pass remaining sauce with meat for dipping.

Note

*For 1 cup of juice, cut 2-3 large POM Wonderful Pomegranates in half and juice them with a citrus reamer or juicer. Pour mixture through a cheesecloth-lined strainer or sieve. Set the juice aside.

Nutrients Per Serving (8.9 oz.): 435 calories, 37g protein, 19g carbohydrate, 22g total fat (7g saturated), 104mg cholesterol, 385mg sodium, 7mg niacin (B3), .6mg vitamin B6, 4mcg vitamin B12, 9mg zinc, 30mcg selenium, .6mg manganese.
